Falafel with Tahini and Pickled Turnips

In Egypt, falafel is usually called ta'ameya and made with fava beans instead of chickpeas. Coptic Christians there eat plenty of it during Lent and their other fasting days, when meat is off the menu. A few crisp ones have been split open next to a bowl of tahini and some bright pink pickled turnips, the herby green inside on full show. It's a falafel jigsaw puzzle that looks like it came straight out of the fryer.
