Farmhouse Kitchen at Thanksgiving

Pumpkin pie is really a custard pie set with eggs, which is why it is done when the edges are firm and the middle still wobbles a little. It finishes setting as it cools, so it needs a few hours on the rack before anyone can cut a clean slice. Here one cools on the butcher block island of a farmhouse kitchen jigsaw puzzle, with fresh bread and a jug of sunflowers nearby while the trees outside turn. On Thanksgiving morning that pie is often the one thing in the kitchen already done.
