Cabbage Kimchi in a Ceramic Bowl

Every fall, Korean families gather for kimjang, a few days of salting cabbages and making enough kimchi to last through the winter. UNESCO added the tradition to its list of intangible cultural heritage in 2013. In this kimchi jigsaw puzzle a bowl of napa cabbage, glossy with red pepper paste and green scallions, waits on a scratched steel counter next to wooden chopsticks. The longer it sits in the fridge, the more sour it gets.
