Sushi Counter

Salmon nigiri feels like an old classic, but raw salmon only caught on in Japan in the 1980s and 90s, after Norway began shipping over farmed fish meant to be eaten raw. A few plates of it sit on a warm wooden counter in a sushi jigsaw puzzle, while the chef works on the next order. Traditional sushi apprentices can spend years on rice and prep before they're trusted to slice fish for customers.
